Amazing, Flavorful Puttanesca Sauce
1 jar organic tomato base sauce of choice (marinara)
1 Tbs capers
1 Tbs fish sauce
1 anchovy smashed (not anchovy paste)
1/2 cup diced kalamata olives
3 Tbs fresh Italian Parsley minced
1 tsp cumin
Juice of ½ lemon
Put the ingredients into a small saucepan and set on low. Let it sit for as long as you like, the flavors get better the longer it sits. It can be made the day before and refrigerated.
This sauce is usually served in restaurants under a protein, like a hearty white fish. It is simple, requires just a few ingredients, and can put together in minutes! Put the sauce in a large frying pan, and heat it on medium low. Add the fish or chicken to the dish and let it simmer and cook until done. I prefer fish with this sauce.
