Blondies Gluten-free
Ingredients
6 Tablespoons grass-fed unsalted butter
1 cup chopped walnuts (or nut of choice)
¾ cup almond butter (I used crunchy)
½ cup dates cut up
1 Tablespoon maple syrup
2 Tablespoons flaxseed meal
2 tsp vanilla extract
½ teaspoon sea salt
1 teaspoon cinnamon
½ teaspoon baking powder
3 organic eggs
Description
Set oven to 350. Line 8X8 pan with parchment. Melt butter in a frying pan on medium low heat. Add chopped nuts and cook stirring frequently until butter foams and then turns brown, 5-6 minutes. Be careful not to burn the nuts. Remove from heat and set a strainer in the Kitchen Aide. Pour nuts into strainer and let strain. Place cut dates into hot butter and mix, let sit 5 minutes. Add the rest of the ingredients to the baking powder. With the paddle attachment mix well for a couple of minutes. Add eggs one at a time. Pour mixture into the prepared pan and sprinkle the top with the reserved nuts. Bake for 20-25 minutes testing at 20. Batter should be dry when tested. Cool. Enjoy!
