Chocolate Pecan Pie or Bars
3 c organic flour (Bob’s Red Mill)
1 c pure cane sugar
2 ticks grass-fed butter room temperature
½ tsp cinnamon
½ tsp sea salt
1 can coconut sweetened condensed milk
6 oz unsweeted chocolate
4 pasture raised organic eggs
1 ½ t vanilla
2 ½ cups pecans in pieces
Turn oven to 350 degrees, have a 13X9 baking pan ready and greased with butter, or spray with coconut spray
In a standing chopper with blade, put the flour, sugar and butter. Pulse until it is sandy texture. Press into prepared pan.
Bake for 20 minutes, until it is light brown and feeling dry on the top
In a small saucepan put the coconut sweetened condensed milk and chocolate and stir at medium low heat until chocolate melts.
Remove from heat.
In a small bowl, whisk the eggs and vanilla together and add to the above mixture.
Stir in the pecans.
Pour over crust, bake for 30 minutes or until firm around the edges.
The original recipe for these bars had corn syrup as the thickener. I found coconut sweetened condensed milk a few years ago, and thought that may be a good replacement for the corn syrup. It works like a dream! I recommend purchasing really good chocolate, unsweetened.
Add more pecans if you like it really "nutty"!
