Dairy Free Keto Friendly Ranch Dressing
3 T avocado mayonnaise
2 T coconut milk (canned variety, full fat)
1 T water (if needed)
Fresh chive, diced small, 1 T
Fresh parsley minced, 1 T
Fresh fennel sprigs diced small
*Alternatively dried spices can be used, I prefer fresh
1 teaspoon each garlic powder, onion powder and mustard powder
½ t sea salt
Fresh ground pepper
1 T Alfonso Picual Olive Oil
1 t Alfonso white balsamic vinegar
Put all ingredients into a small bowl and whisk together. If you want it thicker add more mayonnaise, if you want it thinner a bit of water or more coconut milk.
It is best made up hours ahead so flavors can develop.
Ranch Dressing was never one of my favorites, too “dairy-ish”, fattening, and I never cared for the flavor. Here is my version of ranch, dairy free, Keto friendly.
