Gluten-free Chocolate Chip Cookies
2 sticks grass-fed butter
1 cup pure cane sugar
1 cup brown sugar
½ teaspoon salt
2 teaspoons vanilla
1 teaspoon cinnamon
1 cup Bobs Red mill Oats
1 cup almond flour
1 cup caulipower baking mix (Yes!) (can be found at Sprouts & Amazon)
1 cup toasted pecan pieces (Trader Joe’s)
1 cup (roughly ½ 11 oz bag) dark chocolate chips (try to look for a good brand)
In a Kitchen Aide put in the 2 sticks of butter and sugars, blend until soft with a paddle attachment.
Add the eggs, salt and vanilla, blend
In a separate bowl, add the flours and the cinnamon and whisk together. Add to wet ingredients. Blend but do not over mix.
Add the chocolate chips.
Make large balls and put on a piece of parchment paper on a cookie sheet, about 9 to a cookie sheet.
Bake 350 degrees, 9-13 minutes, check at 9
*NOTE: there is no additional leavener as the cauliflower baking mix has leavener
I am a baker by love and worked in a bakery for three years. I also love a chocolate chip cookie! Nothing better, right? I developed this recipe as a test with the cauliflower baking mix that I found, not expecting it to work, but it did and does! My husband and I thoroughly loved them, and hope you do as well!
