Grapefruit, Cucumber & Avocado Cabbage Salad


2 T avocado mayonnaise

1 T spicy mustard such as Dijon

¼ c good olive oil (I like Alfonso’s and used Blood Orange)

1 small shallot diced

1 avocado diced

½ head of cabbage diced medium

Aprox 15 cherry tomatoes cut in half

½ hot house cucumber sliced

1 large grapefruit, cut into segments *Note: to cut into segments you cut in between each segment and just have the meat of the grapefruit, not the white.

Sea salt and pepper to taste


In the bowl that you will make the salad put the mayonnaise, mustard and olive oil in and whisk together.

Add the rest of the ingredients.


Suggested to make it 30 minutes ahead. This salad is better as it sits, the dressing will coat the cabbage and the flavors meld.

Recipe Story

In Tucson there is a woman that owns a large property with many citrus trees of many varieties. She rents out her expansive home to host events, and I went there to meet with her and see her home. It was quite fun, and I enjoyed talking with her. When I left she plucked a grapefruit off her tree and handed it to me! It inspired me to make this salad.
