Jerk Chicken Sauce
2 small shallots diced small
1 jalapeno, seeded and diced
Zest of 1 lime and juice of 2 limes
1 tsp ground allspice
2 tsp fresh ground pepper
3/4 tsp freshly grated nutmeg
1/2 tsp cinnamon
1 tsp fresh thyme (or 1/2 t dried)
1/2 bunch fresh Italian parsley (or 2 Tbs dried)
1 packet red pepper flakes
3 Tbs + olive oil
2 bay leaves
Combine all ingredients in a blender and process until smooth. Add more olive oil as needed. (If you like it pasty, less olive oil, or more to make it more liquidy). Set Aside. Can be stored in the refridgerator, and made the day prior.
I like to use bone in chicken for this recipe. I use Montreal Chicken seasoning from Costco to flavor the chicken.
Put 2 Tbs of the seasoning on a 9X13 baker, and 2 Tbs olive oil. Put your chicken in and rub the chicken in the oil and seasoning.
Let it sit for 30 minutes and up to 6 hours. Grill the chicken and then top with the Jerk Sauce.
This is a simple chicken recipe, good for any time of year. There is so much flavor going on with the sauce! It is best to make ahead and let the flavors marinade together.
