Pizza Dough or bread dough Gluten-Free
1 package dry yeast
1 T honey
1 ¼ cup warm water
2 1/3 cup cassava flour
1 cup tapioca flour
¼ t sea salt
1 heaping teaspoon olive oil
For bread or pizza dough, start with the yeast package in the bottom of a stand mixer with a paddle attachment. Add the honey and warm water. Let stand for about 5 minutes for yeast to blossom. Add the flours and salt and eggs. Mix together. (For bread or pizza dough I add the olive oil, for bread you can add herbs, etc. at this point.
Turn to a floured surface and add the addition of flour, (can be flours mentioned or almond or coconut flour), and keep adding flour until dough feels less sticky and dryer. Let rest for one to two hours, covered and with a little olive oil.
Transfer carefully to a pan as to not deflate, and bake 350 for 30-45 minutes
I have been playing with gluten-free bread recipes for awhile. I love a good, yeasty, crusty baked bread and miss that!
I like this loaf, it is easy and comes together well, it still isn't my absolute favorite like you get out of a bread store!
