Poached Chicken Breasts


3 chicken breasts (or as many as you need)

stalk of fresh fennel

Big pot of water and sea salt


Put a large pot on the stove with water half way up.

Add 2 T sea salt or Kosher salt

Add stalk of fresh fennel or 1 t fennel seeds

Add juice and rind of one lemon

Bring pot to a boil, then reduce to medium and add chicken breasts. Cook 20 minutes. Cool completely.

Chicken can be used for chicken salad, enchiladas, on top of salad, in pasta...

Recipe Story

Chicken breasts are simple to poach, and great for "Meal Prep Sunday" (at my house)!

They can be used during the week in many  different directions.

I store mine in a plastic bag.
