Sweet Potato Bread


1 medium sweet potato, peeled and cut into wedges, 2 cups grated

1 medium apple peeled, cored

2 eggs

1 cup avocado oil

Juice and zest of one orange

1 teaspoon vanilla

¼ cup honey

¾ cup monk fruit sugar

2 cups cassava flour (gluten free flour made from a yucca root)

1 cup nut blend flour (walnut, pecan, almond and coconut)

½ cup unsweetened coconut flakes

1 teaspoon ginger

1 teaspoon cinnamon

Dash of cloves (1/4 teaspoon)

¼ teaspoon sea salt

1 teaspoon aluminum free baking powder


In a large chopper set with the grating blade, grate the sweet potato and apple together.

Put in a medium mixing bowl

In a separate bowl combine the eggs, honey, zest and juice of the orange and the vanilla. Mix together and set aside

In another bowl put the dry ingredients together, and whisk together to incorporate ingredients

Pour the egg mixture over the sweet potato and apple, and mix together

Add the dry ingredients to the above and mix together

Pour into baking dish

Sprinkle with granola or nuts (if you prefer) can also be left alone

Bake for 35-35 minutes, test with a skewer to make sure it is dry in the middle

Recipe Story

I like to experiment with ingredients and try new recipes. I have made a cake called a Hummingbird cake that calls for sweet potato. I had that framework in mind when I made up this bread.  I used the sweet potato and an apple, which provides next texture and moisture.

To that I added the gluten free flours and the nut flour blend to make a bread with flavor, fiber, texture and taste! It also has a combined sugar of zero calorie sweetener and honey to give it subtle sweetness, but not a "sweet" overkill. 

You will want this bread added to your Sunday morning baking!
