Walnut Date Bread Gluten Free
2 cups pitted dates
Chai or Rooibos tea, brewed and cooled about 3 cups
1 cup walnuts
¾ cup olive oil
1 Tbs vanilla
2 ½ cups almond flour
1 Tbs aluminum free baking powder
1 Tbs cinnamon
1 tsp ginger
½ tsp grated fresh ginger
Step 1. Brew the tea and cool (room temperature)
Step 2. Place the dates in the tea and let sit for one hour. (Can be done ahead of time)
Step 3: Strain the dates and place in a food processer with the walnuts
Step 4: In a standing mixing bowl mix together the olive oil and almond flour, and baking powder. Add eggs one at a time mixing in between each.
Step 6: Add the vanilla
Step 6: Add the date/walnut mixture in with the flour mixture.
Step 7: Add the spices
Have an 8X8 baking dish prepared with spray on coconut oil (do not use a vegetable oil).
Pour mixture in, bake at 350 degrees for 45 minutes to 60 minutes.
Total Prep time: 30 minutes (with one hour soaking time for tea and dates)
I always have dates in the pantry. I love them for a quick sweet treat that I don't feel guilty about eating! I had about 2 cups that were getting old...so I sprung this recipe! It came out really well!
